Since 1896, thanks to his passion and experience, Marcolini family produces an high quality extra-virgin olive oil, extracted from carefully selected olives, which are cold pressed immediately after the harvesting.
Our oil
Our oil has a fruity and slightly bitter taste, it preserves all the qualities of wholesome food products and it matches the savours of our local cookery perfectly.
Oil is an ancient product and tradition, mixed up with experience and passion, is the guarantee offered by people who grow olives and produce oil to preserve in it the organoleptic, healthy and nutritional properties of the fruit of the tree, which is the symbol of our Mediterranean civilization.

To produce oil of quality you also need a technology that guarantees rationality during the different phases of the working process.

Extra-virgin oil, obtained only by mechanical methods, preserves the memory of olives thanks to its fruity taste, which makes its use suitable for dishes with a more or less savoury taste, depending on its intensity.
This oil has also a slightly bitter and/or spicy taste, which makes the product lively for the presence of poliphenols and antioxidants: these elements, together with the vitaminic complex of fruits, distinguish it from other non-virgin vegetable oils and assure it a high healthy value. With the passing of time, these features will diminish and the oil will become “sweeter” and more suitable for delicate dishes.
